I’ve been gluten free for about a week and a half now. And WOW it’s been hard. Do you know how many times I wanted to eat froot loops in the morning? I always have a fruit smoothie or oatmeal instead. My mom has been really supportive of me being gluten free! She really goes out of her way to make sure we have gluten free dinners. Today we had tacos with GF tortilla wrap. Different taste, but still good nonetheless. I hope to see the results of this diet soon, because it feels like my skin condition is getting worse every day. Here’s to good days!

I’ve been meaning to go gluten free for so long.. I just never put in the effort until now. I have a skin condition that has been affecting my body for years, and one of the things my dermatologist recommended was to go gluten free! So here I am! Occasionally I do have some gluten (a little is okay) but other than that my meals have been strictly gluten free!
Since we’re in quarantine, it clearly calls to make some banana bread. I think this is my third batch made.
I didn’t decide I wanted to go into nursing as a pre-major until halfway through my junior year of high school. I’ve been going through a number of health problems since freshman year, took more antibiotics than I can count, and felt as though the problems I had could never be solved. That’s when I figured out that there was probably people that were going through the same things as I was. I felt as though I could use my health to empathize with those who felt the same as I did.
As an avid Grey’s Anatomy fan, sometimes I feel like I know everything about medicine and the medical world. But since that show is entirely fictional, I probably don’t. But hopefully through my future education as a nursing pre-major, I’ll probably be more than aware of what really goes on within hospital walls. The state of what “good health” really is ultimately depends on the person. Just because doing xyz works for you doesn’t mean it works for the next guy. You have to figure out what is good for you! For example, I’m lactose intolerant so I always substitute regular milk for almond milk. Again, like literally all lactose intolerant people, I eat dairy products a lot because sometimes you just want to face the consequences because dairy is good. But still, you need to find what works for you. Focusing back into my future, I’ve always found the medical world very interesting. I love watching all the crazy and exaggerated medical dramas, I love seeing videos of things people would otherwise define as gross, and I love helping other people out. To be able to provide care for those who need it is one of my biggest goals in life, and I can’t wait for the one day that I actually get to do that. It's been a while since I last updated, but that's because I have been very busy with writing a new song called 'Paradise'. So far, the only thing I need to fix is some of the lyrics, figure out a melody, and obviously, record it. I don't know when I'll finish it, but hopefully it'll be a soon! You can my thought process of writing 'Paradise' below.

On the 6th of November, my parents are going on vacation to Hawaii for a week. Without us. And I know, blah blah blah, "Lauren we never had a honeymoon", blah blah blah, "it's for our 22nd anniversary", blah blah blah, "it's too much money to take all five of us". As if they haven't taken two other vacations this year. Sigh. Anyways, since my parents will be approximately five thousand miles away from home, we are going to starve. Just kidding, they left food with us. UNPREPARED FOOD. Since my 21 year old brother has two jobs, my sister can't cook anything other than frozen corn, and my dog doesn't have opposable thumbs, they left me in charge to cook dinner for seven nights, naturally. This is where you can see everything I have made for the next seven days. It'll be the most entertaining thing you'll read all week. Trust me. Wednesday. 11/6/19 Meal: Garlic Parmesan Chicken and French Fries Rate: 4/10 I had to stay late at school on Wednesday because I had rehearsal until 5pm. That being said, I knew that we were supposed to have spaghetti for dinner that night. And we didn't. Clearly. I called my sister at 4pm-ish to make sure the ground meat was thawing out for the spaghetti, and she retorts back with "We're not eating spaghetti tonight. We're having chicken." Mind you, I was so excited to have some good ol'-fashioned spaghetti for dinner. But my sister didn't want to listen to me. Typical. My sister had APPARENTLY already taken out the chicken from the freezer, so obviously she couldn't put it back it in and refreeze it because ew. So I told her to just put the chicken in the oven and cook the rice. But we had no rice. So she made fries. I got home that day about a quarter past five, and the first thing I do is look in the oven. First thing that happens is that tons of smoke rises from the oven and right in my face. It didn't set off the fire alarms, luckily. But I did have to open a window. Apparently, my sister had put an insane amount of olive oil on the chicken (something she wasn't supposed to do) and also literally put 3 fries in the oven. What in the world was she thinking. So I put more fries in the oven and set the timer for longer because that chicken was raw as raw. Even though there was smoke. Thanks olive oil. Twenty minutes had come and gone when I finally took the food out. The chicken was disgusting. My sister had put so much olive oil in the pan that the greasy chicken juices made a pool in the pan. Disgusting. I literally had to dry off my chicken to eat it. But it was still gross. The only reason I'm rating this meal a 4/10 and not a 0/10 is because the fries were delicious. So, yeah. Moral of the story, don't put olive oil on your garlic parmesan chicken unless you want your chicken to go swimming in their own grease. Thursday. 11/7/19 Meal: Spaghetti (with Ground Meat) Rate: 10/10 I'm telling you, there will never ever ever be a day where I don't love some good spaghetti. It is one of the best meals made in the entire world. Breakfast? Spaghetti. Lunch? Spaghetti. Dinner? Spaghetti. All day everyday! I had spaghetti for lunch at school too (not the best but also not the worst) and knowing that I could come home and eat more spaghetti was heartwarming. Thursday's are the days where I get to go home at 2pm, so right after I picked my sister up from school, I popped some popcorn and took a long nap. I started making the spaghetti and meat around 6pm, and it was finished by 7pm. I don't know if you do this, but the noodles gets mixed with the sauce and meat in a big pot. It tastes so much better that way. You also have to load the parmesan cheese on. Otherwise you're not really eating some good spaghetti. Friday. 11/8/19 Meal: You can only guess Rate: 10/10 Spaghetti. Again. Told you it never gets old! Saturday. 11/9/19 Meal: Hamburger and fries Rate: 7/10 Everyone loves a good hamburger from the produce section at Whole Foods. Especially when it's served with both regular fries and tater tots. Except when there is a very little amount of ketchup that you have to share with your little sister. So you make homemade honey mustard and everything is good again. For the most part. Sunday. 11/10/19 Rate: 6/10 Burgers again. Because all we ever do is have leftovers in this house. When are my parents coming back. Monday. 11/11/19 Meal: Pizza Rate: 9/10 We had store-bought pizza on this fine Monday night. As you typically do on Monday's. It was the supreme pizza, in case you're wondering.. which you're probably not. My dog sat by my feet the entire time I was eating. I gave him pepperoni. He's a good beggar. Tuesday. 11/12/19 Meal: Rotisserie chicken with mashed potatoes and peas Rate: 11/10 My sister and I were driving around in my car sometime I don't remember. We were talking about how we most likely had to eat pizza again for dinner tonight. Then, it dawned on me. I haven't had mashed potatoes in a hot minute, and I was craving them! My sister went against what I was saying though, "What if the mashed potatoes are disgusting?" she had said. To which I simply replied, "Nothing is disgusting as long as you follow The Pioneer Woman's cookbook." So after school that day I went to Shaw's with the little money we had leftover from my parents. I bought a rotisserie chicken, a bag of potatoes, and everything else I needed. I was so excited. When I got home, I spent about an hour cleaning and peeling and boiling potatoes. It was like I was a real chef, which I am, obviously. Once I was done, I made the best meal to ever exist. The mashed potatoes were a hit! I truly outsold that night. The mashed potatoes were so popular that my sister took some for lunch. Oh, and my dog had some chicken and peas, naturally. I can't resist his little puppy face. Wednesday. 11/13/19 Meal: Chipotle Rate: 9/10 My parents came home on the 13th and brought Chipotle because no one felt like cooking. They showed us all the pictures from Hawaii and I told them how once Gordon Ramsey tasted how good my mashed potatoes were, he retired and let me take his place. True story. All in all, I had fun 'cooking' this week. I was a real chef, let me tell you. Hopefully I'll try an exotic meal next time, but for now, I'm just gonna stick to making mashed potatoes. I've been performing since the ripe young age of 9. I've done quite a few talent shows, stage plays, and musical theater. Performing is probably one of my favorite things to do in the whole world. It makes me, me. You know? When I entered eighth grade, I started going to a private school. The entire 6-12th grade section of the school probably only had about 80 students at maximum. So yes, it was a very small school. Due to it's size, they didn't have any of the drama programs that I did before. So I played volleyball instead. And I loved volleyball! But despite that, there was still an empty feeling in my heart where my love of performing would be.
My sophomore year of high school I left the private school to go to public school instead, where they had a drama program. And guess what? I was so scared of doing it. Instead, I continued playing volleyball for two more years. I would go to the plays my school hosted but I would never actually try to audition and join the guild. During the late winter after volleyball season was over, I auditioned for the spring musical, and got a part that I knew I would love. The three months I spent with the drama guild were some of the best moments of my life. I knew drama was my home. I knew the people I surrounded myself with are the people I want to be with forever. Flash-forward to the summer before my senior year, I was miserable. I tried out for volleyball yet again, but I didn't put any effort into my tryout because I was so torn on 'sports or drama'. I ended up making the team, and I had no emotions towards it. I wanted to quit so bad. Auditions for the fall play were happening the same week, so I had little time left to decide. I came home one day after a dreadful volleyball practice and went into my room crying. I didn't want to spend the rest of my senior year being miserable. It was right then and there when I decided that tomorrow I would talk to the coach and quit the team. So I did. The day after that, the last day to auditions, I went. I didn't have anything ready for my audition because it was so last minute, but I'm so glad I went anyways. The first day of rehearsals, it felt like a weight was lifted off my shoulders. I finally decided to do what's best for me, not for others. I needed to do what I knew was right in my heart. I've always been a drama kid at heart. I knew that I was finally where I was supposed to be. Right here, performing on stage. |
